White
- Most common variety of mushroom – representing 90% of consumed mushrooms!
- Flavor: mild and earthy
- Try them in: any recipe! Cooked, sautéed, or raw, white button mushrooms are extremely versatile and hold flavor well.

Baby Bella
- Juvenile portabella mushrooms, also called crimini mushrooms
- Flavor: deep and savory
- Try them in: beef, wild game, soups and stews. Just as versatile as the white button mushrooms, but with more flavor!

Portabella
- Their tan to brown caps can be up to 6 inches in diameter
- Flavor: rich, earthy and meaty
- Try them in: your next barbecue! Portabella mushrooms are great on the grill and make a fabulous vegetarian alternative to steak.

Shiitake
- This everyday exotic mushroom has tan to brown umbrella-like caps and their stems should be removed before cooking.
- Flavor: strong earthy, woodsy, and smoky
- Try them in: stir-fries, pasta dishes, soups, entrees and side dishes

Selecting & Storing Mushrooms
- Mushrooms are fresh if they are firm, plump, and free from bruises with no visible moisture on the outside.
- Avoid slimy or spotted mushrooms.
- Store mushrooms in their original packaging or in a porous paper bag for prolonged shelf-life.
- Some mushrooms may keep for up to one week in the refrigerator.
- Fresh mushrooms should never be frozen, but frozen sautéed mushrooms will keep for up to one month.
Cleaning Your Mushrooms
- Brush off any peat moss with your fingers or a damp paper towel or rinse the mushrooms briefly under running water and pat dry with a paper towel.
- To clean sliced mushrooms, give them a shake in a colander to loosen any dirt, then give them a quick rinse just before you’re ready to cook. Dry them off with paper towels.
- Do not soak mushrooms in water as they easily absorb moisture.
If the stem is tough, trim it before using. For shiitakes, stems should be removed before use. - For portabellas, gills may be removed upon preference, as they store a large amount of moisture. Many people prefer to keep the gills intact for more flavor.
